The Task
Aerostar’s commercial management requested a thorough review of the Food & Beverage operation at San Juan International Airport.
Our Approach
To successfully accomplish the objectives, our team conducted an extensive on-site visit, which included an in-depth “secret shopper” review and analysis of all 30 F&B units at the airport. Before the visit, our experts analysed contracts, reports, studies, and other materials to understand the current performance of all operations. After making several anonymous visits to each unit, our team benchmarked the airport’s F&B performance against successful downtown operations and top-performing airports in the US and Canada. We also conducted a qualitative study of global trends in the F&B segment, considering the passenger profile on each airport’s terminals.
The Result
Based on our analysis, we provided specific recommendations for updating and improving the existing offer, recommended new concepts based on global trends and future passenger profiles, and suggested ways to increase product mix, improve pricing structures, communication and sales efforts, and provide general customer service training.
